Variety Descriptions                  Baking Qualities:

Variety Taste
20oz PIPPIN Tart and tangy apple with high acid. Our BEST pie apple. Yellow flesh. Bakes firm with some juice. Holds it's slice. Refrigerate. Use in several weeks.
CORTLAND Sweet with some acid. Crisp, white flesh. Bakes firm, stays in a slice. Great for pies and salads. Stores well if refrigerated.
EARLYGOLD Tart eating and baking. Wonderful for sauce and pies.
GINGERGOLD Sweet/tart eating apple. Excellent early Golden type. One of our best and most requested apples!
GOLDEN DELICIOUS Originated in West Virginia. Thin skinned that ranges from pale green to medium yellow. The yellowier the skin, the sweeter and softer the flesh. Good baking apple if you choose the greenish ones. Particularly suited to open tarts (since it retains its shape through cooking). Resists browning after being cut. Needs very little sugar in cooking.  Sweet eating and baking apple. Thin delicate peel. Bakes firm and makes a chunky sauce. Holds it's shape. Excellent pie apple - you can use less sugar! Store inside a PLASTIC BAG in refrigerator.
GOLDEN SUPREME Sweet eating apple. An early Golden Delicious! Mm good!
HONEYCRISP A new variety, excellent for eating and explosively crisp. Probably the crispest and juiciest apple you'll ever eat.
IDA RED Tart eating and baking. Our best storing apple. Bakes firm and makes a chunky sauce. Marvelous apple pies! Store in refrigerator. Keeps for months!
JERSEY MCINTOSH Early season McIntosh. True McIntosh flavor and texture. Bakes soft and creamy. Cooks apart for a smooth sauce. Keep refrigerated.
JONAGOLD Sweet with some acid. The most popular apple in Europe. A cross between Golden Delicious and Jonathon. Bakes chunky. Refrigerate.
JONATHON Tart, tangy eating and baking apple. Very white flesh. Bakes firm. Holds it's slice. Refrigerate. Stores only for several weeks.
MACOUN Excellent eating apple. An "improved" McIntosh flavor. Bakes soft but will hold it's slice. Refrigerate. Will hold for several weeks.
MCINTOSH Slightly tart eating and baking apple. One of our most popular apples. Cooks smooth and creamy. Slices fall apart in an apple pie. Store in refrigerator.
MOLLIES DELICIOUS Early season Delicious apples. Crisp and sweet! Suggested for eating only. Refrigerate. Use within several weeks.
OZARK GOLD Excellent eating apple. Tart with some acid. Not as sweet as a Golden Delicious. Bakes chunky. Refrigerate. Use within several weeks.
PAULA RED Our best early season apple. Crisp, slightly tart eating and baking apple. Bakes firm. Holds it's slice (similar to a Cortland). Great pies and chunky sauce. Keeps for several weeks in a fridge.
RED DELICIOUS Sweet eating apple. White flesh. Suggested for eating only. Refrigerate. Will store for several weeks. Best for eating out of hand. Deep red  skin with juicy yellow flesh. Will turn mealy over time. Easily recognizable by it shape: tall, with wide shoulders and narrow bottom.
ROYAL GALA Originally from New Zealand, a cross between golden delicious and pippen. Yellow-orange with red stripes. Thin skin, firm and juicy. Great for out of hand eating. Sweet eating apple. Firm, crisp flesh. Store in refrigerator. Use in several weeks.
SPARTAN A McIntosh / Red Delicious hybrid. Sweeter and firmer than a McIntosh but not as starchy. Bakes firm and chunky. Keep cold. Will store for several weeks.
