Sugar Snap Peas

Snow Peas
Sugar Snap peas are a wonderful fresh
sweet vegetable. Kids and adults love peas fresh as a snack or in a salad.
Freezing for winter is very easy! Pick you own or purchase peas ready
picked in season.

Storing and Freezing:
Store picked, unwashed peas as
cool as possible. Wash, drain, snap stem end, and pull down the inside curve
to remove the short string. Blanch in boiling water for 2 minutes from time
of immersion. Plunge into cold water. Drain thoroughly. Pack in freezer bags
or boxes. Pods may also be frozen singly on cookie sheets and re-packed for
storage.
Cooking Suggestions:
Wash, snap stem end, and pull
down the in side curve to remove the short string.
Micro-wave or steam:
3-4 minutes for 1/2 pound pea
pods. Our favorite quick recipe is to microwave pea pods with butter,
chopped onion, salt and pepper. Frozen pea pods need very little cooking.
Place frozen pea pods in steamer basket or microwave dish and heat until
just warmed through, about 4 minutes. Cooked pea pods may be seasoned with
finely chopped fresh mint or dill. Sugar snaps are also excellent in stir
fries or half-cooked on a vegetable dip platter. Raw pea pods are a
